Sunday Dinner – Amagansett Sea Salt Roasted Chicken

 

We love Sunday dinner!  There is something special about Sunday dinner that always brings around food, family, friends and fun.  For tonight’s dinner we used a special salt from one of our favorite local food businesses – Amagansett Sea Salt.  Their salts are featured in some of the top restaurants such as Eleven Madison Park and Gramercy Tavern and for good reason!  Their salt brings an amazing pop of flavor that is unique and very delicious.  For this recipe we used their Mirepoix salt which is hand cultivated sea salt infused and blended with fresh onions, carrots and celery, it gives the chicken a complex flavor without adding all the individual ingredients of onions, carrots and celery.  We chose to pair it with a fun sparkling rose, the Carnaval Rose from Sparkling Point Vineyards on the North Fork.

Simply Chic Amagansett Mirepoix Seasalt Roasted Chicken with Fresh Rosemary

Ingredients

* 1 whole chicken, 3-5 lbs
* 1 to 2 T. extra virgin olive oil
* Seasoned Black Pepper-to taste
* Amagansett Mirepoix Sea Salt-to taste
* 1/3 -1/2 c. fresh rosemary, tear springs from branches

Step 1. Preheat the oven to 375 degrees.
Step 2. Pat the chicken dry and then rub the olive oil generously all over the skin.
Step 3. Season with the season pepper inside and out of the chicken.
Step 4. Sprinkle the Amagansett Mireporx sea salt on top of the skin and some inside.
Step 5. Place Rosemary on the side—1/4 cup
Step 6. Place the chicken on a roasting dish or baking sheet.
Step 7. Roast the chicken for 1 ½ hours. Then top the chicken with ¼ cup of fresh rosemary all over the top of the chicken very generously. Put back in the oven ½-1 hour, until sizzling.
Step 8. Sprinkle a few more sea salt crystal on top of the skin sparingly to top it off.
Step 9. Your stunning roasted chicken is ready to be put on a platter with other vegetables! Served here with roasted radishes and squash!
