Farmstand Spiralized Squash & Grilled Chicken

Our spiralized squash and grilled chicken is farmstand fresh, packed with fresh delicious veggies.  Its beautiful, easy and serves a group.  We have paired it with an easy weeknight drinking table red wine from Saltbird on North Fork – this wine pairs great with the chicken and basil flavors in the dish.

Farmstand Spiralized Squash & Grilled Chicken

Ingredients

3 large chicken breasts
3 T. fresh Lime juice
2 T. olive oil
1-2 T. Dijon Mustard
Salt and pepper to taste
2 large zucchini squash
1 T. Canola oil mixed with 1 T. olive oil
3 large limes, cut in half
1 ½ c. cherry tomatoes, halved
½ cup of fresh basil leaves
Dressing: 2 T. Canola oil,2 tsp. Apple cider vinegar,1/2 large lime,2 Tsp. lemon juice,1-2 T. Dijon mustard,1/8 tsp. sea salt, ½-1 tsp. Lawry’s seasoned pepper-whisk together

Step 1: Marinate the chicken breast in a baking dish for 15 minutes with the lime juice, mustard, salt and pepper.
Step 2: Bake at 375 degrees for 20-25 minutes.
Step 3: Spiral the 2 large squash. In a large skillet, put 1 T. canola oil and 1 T. of olive oil and heat. Add the spiraled squash and cook lightly. At the same time, brown the 6 halves of the limes.
Step 4: Now, put the squash and limes on a beautiful platter.
Step 5: Mix the cherry halves and basil leaves with the dressing. Then pour these on top of the squash.
Step 6: Then, take the chicken breasts from the oven when they are ready and lay the chicken on top of the squash-tomatoes-limes-basil mixture.
Step 7: It is ready to serve and is a beautiful presentation as well as Delicious!
