Bourbon and Bacon Meatloaf
Ingredients
12 slices of extra thick bacon, *6 slices will be crumbled for the mixture and 6 cut in half for the top of the meat loaf
Bourbon Smoked Pepper and Bourbon Smoked Sea Salt --to taste
2 pounds ground sirloin
2 large eggs, beaten
2/3 cup bread crumbs, we used panko
1/2 large onion, diced finely
2 T. each of catsup and chipotle hot sauce
6 tsp. Worcestershire sauce
2 tsp. Dijon mustard
3/4 tsp, sea salt
1 tsp. seasoned pepper
2 oz. bourbon beer
Glaze: 3/8 cup brown sugar, 3T. catsup,2 tsp. Worcestershire sauce, 2 oz. Bourbon Beer
1.Preheat oven at 350 degrees.
2. in a mixing bowl, stir together the sirloin beef, eggs, bread crumbs, onion, catsup, sauces, mustard, salt and pepper, and bourbon beer.
3. Next. cook, 6 slices of bacon and sprinkle Bourbon Smoked Pepper on it. Cook till crisp. Drain-cool-crumble. Then add to the meat mixture.
4. Then cook the other 6 slices of bacon, cut in half, with a little brown sugar and Bourbon Smoked Sea Salt. Cook only a few minutes to get it warmed.
5. Shape the beef mixture into a rectangle shaped loaf and place into a baking dish. Now, place the slightly cooked bacon on top of it.
6. Now make the glaze -mix the brown sugar, catsup, Worcestershire sauce, and bourbon beer together and brush half on top of the meatloaf.
7. Bake the meatloaf for 40-45 minutes, then brush the rest of the glaze on top and bake about 25-35 minutes more or until done. The bacon should be crisp--if not, put under the broiler to make it crisp.
