Roasted Sweet Potatoes with Feta & Walnuts
Ingredients
Sweet potatoes--how ever many you want to cook
Feta Cheese-crumbled
3 cheese shredded blend-Parmesan, Romano, Asiago
walnuts
olive oil
sea salt
butter
honey
small spinach leaves
1. Preheat the oven to 375 degrees. Put olive oil on the sweet potatoes and rub it into the skin. Then prick with a fork in several places to prick the skin.
Now, wrap in foil paper.
2. Put on a baking sheet and cook for 30 minutes. Check to see if soft to squeeze. If they are not quite soft, bake 15 more minutes and check again. Keep baking until very soft--may need up to one hour.
3. After baking, unwrap the foil and put on a plate. Slit down the middle of the potato and squeeze open with both fingers. Do this on all the potatoes.
4.Next, we are stuffing the potatoes-- first put in 1 T. of butter, then the crumbled feta--about 2 T., next add in the 3 cheese blend with plenty of cheese. Last top with the walnuts. you mix the walnuts in olive oil and sprinkle sea salt on them.
5. Now, to finish, drizzle with honey! You are ready to serve--put on a platter with small spinach leaves and sprinkle walnuts around the potatoes.
