Highlighting one of our favorite recipes – so simple and super delicious!  Farmstand Flatbread (which can even be done with a ready made frozen pizza!), makes a fun appetizer or even a great light and simple meal.  We love it paired with a cabernet franc – our two Long Island favorites with it are from Channing Daughters or Bedell Cellars.

Farmstand Flatbread

Ingredients

* Premade pizza dough
* 1 cup of grated Mozzarella cheese
* 1 cup of grated Asiago cheese
* 1 cup of Arugula
* 1 whole Avocado sliced
* 3 Eggs, fried to liking
* 1 tablespoon of fresh basil chopped
* 1 tablespoon of parsley chopped
* Sea salt to taste
* Approximately 1 tablespoon of olive oil (drizzled to tasted)

Preheat the oven to 425 degrees
Allow the pizza dough to sit for 20 minutes till it comes to room temperature
Roll the dough into a circle that’s ¼ - ½ inch thick
Place dough an oiled baking sheet
Top dough with grated mozzarella and asiago cheese
Sprinkle garlic, basil, parsley and sea salt over dough and drizzle olive oil on dough
Bake dough for 10 – 14 minutes to desired crispness
Remove from over and let pizza rest then add these three toppings: 1 slice thin avocado around the edges forming a circle, take the argula and sprinkle over pizza and finally top with fried eggs
