Fabulous Over-The-Top Meringue Topping
Ingredients
11 extra-large egg whites at room temperature
3 1/3 c.sugar
dash of cream of tartar
1. In a stainless steel bowl, combine the egg whites, sugar, and dash of cream of tartar. Make sure--no yolks at all!
2. Set the bowl over simmering water, whisking constantly. Heat the mixture until the sugar dissolves--about 2 minutes.
3. Remove from the heat and beat using an electric mixer for 9-10 minutes until the meringue is stiff and shiny.
4. Pile the meringue on your cake or pie. Then style the meringue with your fingers or a spoon by plucking at it to tease the meringue into high, jagged spikes. Then, use a kitchen torch, holding it 3 inches from the meringue, and brown the meringue by moving it slowly all over the meringue.
